What You’ll Need:
- 1 Package Drake Meats Farmer Sausage – sliced into rounds about 5mm thick
- 2 small to medium zucchinis– sliced into rounds about 5mm thick
- 2 small to medium zucchinis – cut into julienne ribbons or substitute desired pasta
- 4-6 Cherry/Grape Tomatoes
- Pesto Sauce – 1 cup of ready-made or homemade
- 2 cups fresh basil leaves
- 1/2 cup freshly grated Parmesan
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts (can sub chopped walnuts)
- 3 garlic cloves, minced (about 3 teaspoons)
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- juice from 1 lemon
Directions:
- Coat frying pan with oil and place on medium high heat
- Add farmer sausage, cook for 3-5 mins
- Mix pesto sauce ingredients in mortar and pestle and pulverize until a paste is formed – add salt and pepper to taste
- Add pesto mix to pan
- Add in zucchini noodle or your desired cooked pasta
- Cover and simmer for 5 minutes until zucchini is cooked through out and the sauce is well incorporated
- Add the tomatoes and simmer for 1 minute
- Take the pan off the heat and allow to stand for 5 minutes
- Serve and enjoy!
